Cacaomassa kan verder verwerkt worden. Deze bestaat uit twee verschillende componenten – cacaoboter en cacaopoeder – beide essentieel voor verschillende toepassingen.

Deze twee bestanddelen kunnen enkel gescheiden worden door de vloeibare cacaomassa door een zeer fijne zeef te persen.

Op het einde van de persprocedure wordt deze cacaokoek verwijderd en in verschillende fasen verder vermalen tot een zeer fijn cacaopoeder.
